An easy to make soup that will have them coming back for more! Fresh chicken and tortilla chips with vegetables. Makes for a delicious, warm soup. Try garnishing with cheese and/or a little fat free sour cream.
Ingredients: 1 C. onion, chopped 2 cloves garlic, chopped 3 green onions, chopped 2 (12 oz) cans of diced tomatoes (Use 1 can of Del Monte Mexican Diced Tomatoes and 1 regular for more "heat") 4 C. low fat chicken broth 1/3 c Salsa 1/2 red pepper, chopped 1/2 green pepper, chopped 3/4 celery stalks, chopped 1/3 c. fresh cilantro (substitute dried if preferred) 1/2 cumin 1/2 tsp. chili powder 1/2 tsp. basil
Directions: Simmer onions, garlic, and green onions in pan until tender. Put all ingredients in a pot and simmer until vegetables are tender. You can also just put everything together all at once in a crock pot. No sauteing needed. Add chicken as you wish. To serve you may add strips of tortillas and garnish with fat free sour cream. Soup is also good without the chicken, tortillas or sour cream.
