Cook ground beef, onions and garlic. Add remaining ingredients (except cheese, tortillas, and 1/2 cup of enchilada sauce). Simmer 10 minutes. Fill tortillas with meat mixture and roll. Place in a baking dish sprayed with Pam, seam side down. Top with remaining enchilada sauce and cheese. Bake at 350 degrees for 10 minutes or until warmed through and cheese is melted.
